SOUS CHEF KILLARNEY CO.KERRY. We are recruiting for a hands on Sous Chef that will work with the Head Chef in this busy restaurant in Killarney. Co. Kerry. Style of operation would be contemporary/bistro with modern day classics. This is a large 140 seater restaurant that is open for Lunch & Dinner. Ideally you will have strong exposure to Volume operations, Seasonal menus and managing a team in the Kitchen. Strong on Range & Grill is essential for this. Kitchen is fitted out exceptionally well with great attention to detail and all equipment well maintained. Operates a Cooking Line system. Great preparation kitchen also. This is a volume operation so experience in high numbers is a must while maintaining consistency. Position may suit a Senior CDP or Junior Sous seeking a Sous Chef position. The Candidate will possess: " Previous experience preferably in volume a la carte restaurants on the high street. " Kitchen Management & manage a small but dedicated team. " Is hands on with a team working attitude. " Is a hands on Chef & Kitchen Manager. " Has particular strengths in range, grill & sauce. " Great eye for food presentation without effecting the taste quality. " Cost focused coupled with portion control. " Food Safety trained and HACCP compliant. " Staff Induction & training.
