Head Pastry Chef Co. Kerry- Days only 7-3. Fantastic opportunity for an experienced Pastry Chef to join a busy pastry/bakery operation in Kerry. This is producing breads and pastries, gateaux, mousses, terrines etc. for their units. No Service of Pastries and working with others. Must have string Pastry Background at high end. Key Responsibilities include: " The ability to manage the daily operation of the pastry section. " Experience in high volume service looking after multiple outlets. " To contribute to the production of food items as instructed by the Head Pastry Chef. " To ensure that all dishes are prepared in a timely fashion and as instructed by the Head Chef and/or Sous Chef. " To ensure that all dishes leaving the kitchen are prepared to the approved standards of presentation. " To adhere to HACCP procedures at all times. " To ensure that all kitchen staff observe appropriate systems of hygiene during food preparation & storage. " To work in accordance with health & safety legislations and to report any faults to equipment to the manger/supervisor. " To be familiar with and have knowledge of the hotels daily business. Ideal candidate: " Previous experience in a similar role ideally Bakery, Confectionary or 4*/5* Hotels. " Has a mix of Fresh Dough Breads and Pastries preparation and cooking. " Can deliver a high standard of presentation. " A Professional culinary education qualification. " Detailed knowledge of HACCP. " Experience of working with quality standards and be focused on providing a consistently high standard of service. " Must be standards driven and detail-orientated.
