Sous / Head Chef - Iconic Restaurant Kenmare Co. Kerry. An outstanding opportunity for a strong experienced Sous Chef or Head Chef has arisen at an award winning restaurant for their exceptional cuisine in the gourmet capital ok Kerry, Kenmare. This is an outstanding opportunity for an experienced Sous or Head Chef to be part of a well-established team going through an exciting transition. Style of food is all fresh cross between contemporary and the classics but very much rustic/ country house. This restaurant is Multi Award winning and in all international food guides, standard of cooking is high! An exciting, challenging yet very rewarding position for right Chef who has the passion, knowledge & willingness to work with a great team. As Sous / Head Chef you will be expected to exceed all guest expectations brining your obsession for food and love of cooking to each & every dish. The right Sous Chef/Head Chef will be working with a small but dedicated brigade of chefs & reporting directly to the Owner. Experience in 4*/5* Hotels or Fine Dining Restaurants exceptional etc. is preferred. This position is for a driven, passionate and foodie head chef always wanting to try new ingredients, new dishes and fantastic presentation, is that YOU? Specific Duties: Assist the owner to retain the standards in the Fine Dining restaurant whilst working towards achieving industry awards. Deputise in the absence of the Owner. Oversee the kitchen to include freshness of ingredients, level of staffing, mise en place. Assist with menu writing and dish creating. Ensure that the section is set for service. Assist in training all junior Chefs and Kitchen Porters. . Ensure the kitchen is organised with the correct daily menus, mis en place, job lists and that kitchen jobs are prioritised in the correct order. Assist in maintaining a professional level in each kitchen adhering to the. Standard Operating Procedures and Policies. Assist and prepare the day to day ordering for the kitchen. Ensure that the kitchen areas are clean and meet safety standards. Assist with HACCP and Health and Safety procedures.
