We are currently recruiting for an experienced Sous Chef for The Malton, Killarney. Key Responsibilities: Work alongside the Executive Head Chef to ensure the smooth running of the kitchen/banqueting kitchen. Deputise in the Executive Head Chef`s absence. Ensure that all Chefs are familiar with the day`s requirements. Ensure that the necessary stocks are on hand at the right quantity and quality. Ensure that all statutory, as well as company, hygiene regulations are strictly adhered to. Deliver the highest standards of food and service at all times. Make sure the hygiene and food safety standards are met in all stages of food preparation, starting with the ingredients and ending with the finished dish which leaves the kitchen. Ability to control a fast paced high volume kitchen/banqueting kitchen. Ensure that all dishes leaving the kitchen are prepared to the approved standard of presentation. Requirements: Minimum of three years experience as a Sous Chef. High standards of quality and consistency. Attention to detail, excellent presentation skills. Enthusiasm and creative talent. Passionate approach to the production of food. Flair and imagination. Management and organisational skills. Fully aware and compliant in Food Safety and HACCP Food Management Systems.
